Easy Mediterranean Chicken & Halloumi Bowl

Ingredients
  • Chicken breast
  • Halloumi
  • Red onion
  • Zucchini
  • Red paprika
  • Garlic
  • Lemon
  • Grovehood Collective Italian Olive Oil
  • Parsley
  • Thyme
  • Paprika powder
  • Salt
  • Pepper
  • Couscous or buckwheat
  • Pomegranate
Method
  • Roast Veggies: Chop onion, zucchini and paprika; toss with olive oil, salt & pepper. Roast at 200°C for 25 min.
  • Bake Chicken: Flatten chicken breasts and then mix olive oil, lemon juice, garlic, herbs, paprika, salt & pepper. Coat chicken & bake at 200°C for 20–25 min and rest it for 5–10 min.
  • Cook Grain: Prepare couscous or buckwheat per package.
  • Fry Halloumi: Cube & pan-fry until golden.
  • Assemble: Mix all together, top with parsley, pomegranate and lemon juice.
