
Easy Mediterranean Chicken & Halloumi Bowl

Ingredients
- Chicken breast
- Halloumi
- Red onion
- Zucchini
- Red paprika
- Garlic
- Lemon
- Grovehood Collective Italian Olive Oil
- Parsley
- Thyme
- Paprika powder
- Salt
- Pepper
- Couscous or buckwheat
- Pomegranate
Method
- Roast Veggies: Chop onion, zucchini and paprika; toss with olive oil, salt & pepper. Roast at 200°C for 25 min.
- Bake Chicken: Flatten chicken breasts and then mix olive oil, lemon juice, garlic, herbs, paprika, salt & pepper. Coat chicken & bake at 200°C for 20–25 min and rest it for 5–10 min.
- Cook Grain: Prepare couscous or buckwheat per package.
- Fry Halloumi: Cube & pan-fry until golden.
- Assemble: Mix all together, top with parsley, pomegranate and lemon juice.
